For the shortcake:Melt the butter and set it aside to cool. Whisk your eggs, then add the butter and the rest of the ingredients to a large mixing bowl. Pour the batter into the dish and bake for 14 to 18 minutes.
For the strawberry crunch topping: Place the oreos in a ziplock bag and crumble them using a rolling pin. Place in a bowl and pour melted butter a little at a time and stir between pours.
Allow the shortcake to cool for 1 hour. Then spread cream cheese frosting on top of the cake. Add the strawberry crunch topping along with sliced strawberries (optional)
