Main dishes are understandably the star of many meals, but I personally have a thing for sides!
It’s a great place to squeeze some extra veggies into the mix, and they work to really round out dinner.
Some of my favorites include mashed potatoes, green bean casserole (my version doesn’t require cream of mushroom!), and cornbread stuffing.
Today’s recipe has quickly become another one of my preferred sides. It’s full of vegetables — asparagus and carrots to be exact!
Roasted asparagus and baby carrots can be prepared in so many different ways: roasted asparagus and carrots with balsamic or roasted asparagus and carrots with Parmesan cheese are two popular versions.
My recipe is all about honey roasted carrots and asparagus. Honey is such an amazing natural sweetener, and I like to use full-sized carrots instead of baby ones.

How To Make Roasted Carrots and Asparagus

STEP ONE: Before you get started, make sure that your carrots are scrubbed, peeled, and cut. I love using a Y-peeler to peel carrots as it sits in your hands much nicer.
You should also wash the asparagus and trim the ends. Once you have everything prepped, preheat your oven to 425 degrees F.
STEP TWO: Place the carrots into a large roasting pan or casserole dish and drizzle with half of the olive oil. Sprinkle with half of the salt and pepper and toss to mix and cover evenly. Roast your carrots for 20 minutes, or until they start to become tender.
STEP THREE: Remove the roasting dish from the oven and add your asparagus. Drizzle with the remaining olive oil, salt, and better, and then bake for an additional 10 minutes.
STEP FOUR: Drizzle the roasted carrots and asparagus with honey, toss, then place back in the oven for 2-3 more minutes. Serve them while they’re hot!
Do You Have to Boil Asparagus Before Baking?
You don’t have to! Asparagus cooks up very quickly, which is why you need to roast your carrots for 20 minutes before you add them to the roasting pan.
They’ll be fork-tender in about 10 minutes, and then all that’s left to do is to add the honey and cook for just a few more minutes.
The results are perfectly sweet! The same goes for recipes like roasted asparagus and carrots with balsamic or roasted asparagus and carrots with Parmesan cheese.

How Long Do Carrots Take To Bake?
I start with 20 minutes — they should just start to become tender at this point.
Once I’ve added my asparagus, I bake everything together for 10 minutes more, and then just a few more minutes after I’ve added the honey.
All in all, carrots won’t take longer than 30 minutes to bake. If you want to save a little time, you can make roasted asparagus and baby carrots instead.
The baby carrots only need to be roasted for 5 minutes before you add the rest of the veggies!
What Is The Best Temp To Roast Veggies In The Oven?
It depends on what vegetables you use, but you should aim to roast them somewhere between 400-425 degrees F.
I like roasting carrots at 425 degrees F as they usually take a long time, and cranking up the heat a bit can make the process a bit faster.
Remember: roasted asparagus and baby carrots won’t take as long, but you can keep the temperature the same.
Do You Wash Asparagus Before Roasting?
Yes! Make sure to thoroughly wash your asparagus before you cook it.
You should also dry them — you want them to brown in the oven instead of steam, so you need to make sure they’re completely dry.
You’ll want to do the same for other roasted asparagus recipes like roasted asparagus and carrots with Parmesan cheese or roasted asparagus and carrots with balsamic.

Roasted Carrots and Asparagus
Ingredients
- 2.5 pound big carrots scrubbed and stems trimmed
- 2 pound asparagus washed and ends trimmed
- 2 tablespoons olive oil divided
- 1 teaspoon salt
- ½ teaspoon fresh cracked pepper
- 3 tablespoons honey
Instructions
- Preheat the oven to 425 F.
- Place the carrots into a large roasting pan and drizzle half the olive oil overtop, sprinkle with half the salt and pepper, and toss to mix.
- Roast in the preheated oven for 20 minutes or until starting to be tender.
- Add the asparagus and the remaining oil and salt, and pepper and mix, roast for an additional 10 minutes.
- Drizzle the honey overtop, toss to mix, then return to oven an additional 2-3 minutes.
