– Butter – Granulated sugar – Large egg – Pure vanilla extract – Lemon extract – All purpose flour – Fresh lemon zest – Baking soda – Fresh blueberries

Add the  butter and sugar to a bowl and combine. Add the egg, vanilla and lemon extract. Fold in the dry ingredients.

Add the blueberries and fold them into the dough. Cover the dough and place it in the fridge for at least 30 minutes.

Scoop out 2-tablespoon sized portions and place them on the lined baking sheet.

Bake the cookies for 10 mins. Run a round cookie cutter around the edge of each cookie to shape it into a circle!

Return the cookies to the oven for another 3-5 minutes. Allow the cookies to cool completely.
