This recipe for split baked chicken breast is one of my absolute favorites! It is simple, fall-of-the-fork tender, and bursting with tons of garlicky-herby goodness. 

The real secret to this recipe’s success is that it features baked chicken breast bone in and skin on which leads to supremely tender and moist results.

The bone facilitates even cooking while the skin traps in moisture. It’s also less expensive!

How to Make Baked Split Chicken Breast

STEP ONE: Preheat your oven to 400 degrees F. Use parchment paper to line a roasting pan for easier clean-up later. Set the pan aside.

STEP TWO: Combine the oil, garlic, salt, oregano, paprika, and black pepper in a small bowl and mix together.

STEP THREE: Use the oil mixture to coat each piece of chicken, rubbing the seasoning in before transferring it to the roasting pan. Place the pan in the preheated oven and let the chicken cook for about 45-50 minutes.

The meat is ready when the internal temperature reaches 165 degrees F and the juices run clear. 

STEP FOUR: Serve immediately and enjoy!

How Do I Store Leftover Baked Bone-In Chicken Breast?

Any roasted split chicken breast you have left over can be easily stored in an airtight container in the refrigerator for up to 3-4 days.

For safety, be sure to transfer your leftovers to the refrigerator within 2 hours of being at room temperature. 

You can also store your leftover baked bone-in chicken breast in the freezer for 4-5 months when stored properly.

Thaw for several hours in the refrigerator once ready to enjoy again.

Both chicken breast and split chicken breast are tender white meat that is cut from the chest of the chicken and has had the tenderloin removed. 
While a skinless, boneless chicken breast may be cut in half, the term “split chicken breast” typically refers to a cut of chicken with the skin still on and the bone still intact. 
While it might not be obvious at first, baked bone-in chicken breast is far superior in many ways to its skinless, boneless counterpart.
In particular, the skin helps hold in moisture while the bone helps the meat cook more evenly. 
Furthermore, baked chicken breast bone in is less expensive to make. Even when you factor in the weight of the bones, bone-in poultry has a much better price point. 

How do you cut a split chicken breast?

To cut a baked bone-in chicken breast for serving, place the breast skin-side down on a cutting board. Slice horizontally, keeping your knife parallel to the board, to create even portions.

How much does a baked split chicken breast yield?

On average, a baked split chicken breast has about 6 to 8 ounces of meat per half, depending on the size of the chicken breast. Keep in mind that this weight includes both the meat and the bone.
