STEP ONE: Preheat your oven to 350°F and grease a 9×13″ baking dish — either butter or nonstick cooking spray will work.

STEP TWO: In a large mixing bowl, combine the uncooked elbow macaroni, cream-style corn, whole corn kernels (including the juice), diced Velveeta cheese, and shredded cheddar cheese. Thoroughly mix all these to create your cheesy base.

STEP THREE: Transfer the mixture to the prepared baking dish and sprinkle it on top of the diced butter stick, promoting a golden, flavorful crust.

STEP FOUR: Cover the baking dish securely with foil, then place in the oven and bake mac and cheese with corn for 20 minutes. 

STEP FIVE: Meanwhile, melt the remaining 2 tablespoons of butter in a small bowl until it becomes a smooth liquid. Stir the crushed Ritz crackers into the melted butter, creating a buttery and crunchy topping for the macaroni and corn casserole.

STEP SIX: After 20 minutes of baking, remove the foil and stir the macaroni corn casserole.

STEP SEVEN: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the macaroni and corn casserole. Then, generously sprinkle the butter and Ritz cracker crumb mixture over the cheese.

STEP EIGHT: Return the uncovered baking dish to the oven and continue baking the corn macaroni casserole for an additional 25 minutes, or until the cheese turns bubbly and golden brown.

What to Serve with Mac and Cheese with Corn

Variations for Macaroni Corn Casserole 

  • Use a different pasta shape. While the recipe suggests using elbow macaroni, feel free to try mini shells, wheels, or orecchiette. These alternatives will add a unique twist to the texture of your macaroni and corn casserole!
  • Leave off the crunchy topping. The buttery Ritz cracker crumble for this mac and cheese with corn recipe is optional, so feel free to skip it. If you simply don’t have crackers on hand, use panko breadcrumbs instead!
  • Swap out the cheese. Replace some or all of the cheddar with shredded Monterey Jack, Pepper Jack, or even crumbled feta cheese!
  • Add extra veggies. While corn is the star ingredient, you can elevate the dish’s nutritional value by incorporating a colorful medley of diced bell peppers, chopped spinach, or roasted zucchini. 
  • Include some protein. Diced chicken, crispy bacon bits, or sliced sausage would all be tasty in macaroni corn casserole. Just be sure to cook them first — or use up leftovers!

Make a few simple swaps for a gluten free version of this recipe! Use your favorite GF pasta as long as it’s a small shape like elbow or penne noodles.

Then, replace the Ritz crackers with gluten-free breadcrumbs or crushed gluten-free crackers for the topping — or skip it altogether!

Can I Prepare Corn Macaroni Casserole In A Slow Cooker?

You can absolutely adapt the recipe to make macaroni and corn casserole in a slow cooker! Keep in mind that it won’t be completely hands-off, and it will take longer to cook. You will also have to make some adjustments to the crunchy cracker topping.

  • Step One: Combine everything except the shredded cheddar cheese and cracker topping in the crockpot, then give it a good stir. 
  • Step Two: Cook on High for 45 minutes, stir, then another 30 minutes, and stir again. 
  • Step Three: Reduce heat to Low and cook for about 3 hours, until the pasta is tender. Then, stir in the shredded cheese until melted. 
  • Step Four: If you still want the crunchy topping, melt butter in a pan on the stove and add the breadcrumbs. Cook over medium heat, stirring frequently, until the cracker crumbs are toasted. Then, sprinkle over each bowl before serving!

How Do You Make Macaroni and Corn Casserole without Creamed Corn?

You can make a variation of macaroni corn casserole without creamed corn.

Instead, you can use whole corn kernels and add a combination of heavy cream, milk, or sour cream to achieve a creamy texture.

Ingredients

  • 1 cup dried elbow macaroni

  • 1 can 15 ounces whole corn kernels (with juices)
  • 4 ounces velveeta diced
  • 2 cups shredded sharp cheddar cheese divided
  • 1 stick ½ cup + 2 tablespoons butter, divided and diced
  • 1 cup crushed ritz crackers

Instructions
 

  • Preheat the oven to 350°F. Lightly grease a 9×13” baking dish with butter or nonstick cooking spray. 
  • In a large bowl, combine the uncooked elbow macaroni, cream style corn, whole corn kernels (with juices), diced Velveeta, and 1 cup of shredded cheddar cheese. Transfer the mixture to the prepared baking dish and sprinkle over the stick of diced butter. 
  • Cover with foil and bake for 20 minutes, then stir the macaroni casserole. 
  • In a small bowl, melt the remaining 2 tablespoons of butter and then stir the melted butter and the crushed ritz crackers. 
  • Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the casserole and top with the ritz cracker crumbs. 
  • Bake the macaroni creamed corn for an additional 25 minutes, or until the cheese is melted and bubbly and the top is golden brown. Enjoy.
