From home fries with breakfast to a universally-loved side with dinner, there’s never a bad time to whip up potatoes. And if you’re looking for a fool-proof recipe the whole family is sure to love, you have to try making diced potatoes in the air fryer!

These tasty bites are crispy on the outside, tender on the inside, and only require a few minutes of hands-on prep! Just dice, soak, dry, then air fry. It’s seriously that easy.

How to Make Air Fryer Diced Potatoes

STEP ONE: Wash your potatoes, then dice them into small evenly-sized cubes. 

STEP TWO: Soak the diced potatoes in cold water for 10 minutes. Once they have soaked, drain them and then pat them dry with a paper towel.

STEP THREE: In a bowl, toss the potatoes with the thyme, garlic, olive oil, and lemon juice. 

STEP FOUR: Place the diced potatoes in your air fryer basket in a single layer.

STEP FIVE: Cook at 380 degrees F for 20 to 25 minutes, giving the basket a good shake at the 10-minute mark.

How to Store Leftover Roasted Potatoes

Make sure you let the potatoes fully cool to prevent them from getting soggy. After that, store them in an airtight container in the refrigerator. They will stay fresh for up to 5 days, although I’d be surprised if these delicious, crispy bites last that long!

Can I Use a Different Kind of Potato Instead?

I suggest using something smaller like red potatoes for this recipe. Personally, I prefer the taste and texture. But because you’re going to be dicing up the potato, you can really use any kind you like to make roasted potatoes in the air fryer! 

The most important part is that you cut the potato into evenly-sized cubes so they’ll cook through at the same rate.

How Long to Cook Diced Potatoes in the Air Fryer

Depending on how small you dice the potatoes, they should take anywhere from 20 to 25 minutes to cook. 

You want the cubed pieces to be crispy and golden on the outside, but fluffy and fork-tender on the inside. When in doubt, I would err on the side of over-cooking.

Should I Soak or Rinse the Potatoes Prior to Cooking?

Absolutely! It only takes 10 minutes, and this step is crucial for removing some of the starch. That’s what allows the potatoes to get so nice and crispy in the air fryer. Just make sure to give them a good pat with a paper towel afterward.

Tips to Get the Crispiest Diced Potatoes in the Air Fryer

  • The closer the diced potato pieces are in size, the more evenly they will cook. 
  • Make sure to soak the diced potatoes in cold water. This will help remove some starch and allow them to crisp up more.
  • Cook the potatoes in a single layer in the air fryer and make sure to shake the basket at the halfway mark so the pieces can crisp up on all sides.
  • Before serving, you can sprinkle more fresh thyme over the potatoes, add some zest from your lemon, or both!

How to Reheat Diced Potatoes in the Air Fryer

  1. Preheat the air fryer to 350 degrees F.
  2. Lay the leftover diced potatoes in the air fryer basket in a single layer.
  3. Cook for 3 to 5 minutes until heated through.

Can You Make Frozen Diced Potatoes in the Air Fryer?

Yes! If you pick up a bag of Simply Potatoes or Ore Ida in the frozen section of the grocery store, they cook up nice and crispy in the air fryer!

  1. Preheat your air fryer to 400 degrees.
  2. Place the frozen diced potatoes in the air fryer in a single layer and cook for 15 to 20 minutes, shaking halfway through, until hot and crispy.

I like to mist the potatoes with an oil mister halfway through cooking before tossing them while cooking. This lets them get extra crispy without being dry.

Ingredients

  • 1 ½ pounds of small potatoes
  • 2 cups cold water
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme
  • ½ tablespoon minced garlic
  • ½ tablespoon olive oil
  • Juice of 1/2 a lemon about 2 tablespoons of a medium size lemon
  • Salt to taste

Instructions
