I made this recipe using my Instant Pot 6-Quart Duo Nova. It’s the perfect size for my family of four and makes releasing the steam so much easier than the standard Instant Pot.
How to Make Instant Pot Chicken Fajitas

STEP ONE: Slice chicken into strips and place in a mixing bowl. Drizzle with oil, then sprinkle fajita seasoning over the top. Toss well to ensure every piece is evenly coated.
STEP TWO: Transfer the seasoned chicken to the pressure cooker. Pour the salsa evenly over the chicken, then add the onions and peppers. Pour the lime juice over the entire mixture.
STEP THREE: Seal the lid on the Instant Pot, then set the cooking mode to Manual High for 4 minutes. Once done, perform a quick pressure release.
STEP FOUR: Open the lid and give the Instant Pot fajitas a gentle stir, combining everything together.

Yes, you can use frozen chicken for this recipe. Adjust the cooking time to 12 minutes with a 5 minutes natural pressure release.
Instead of slicing ahead of time, add the boneless breasts to the IP whole. You’ll also want to use a frozen fajita veggies mix — fresh veggies will be too soft with the extra cooking time. Once cooked, let the chicken rest for a few minutes before slicing or shredding.
Can I Make Chicken Fajitas in a Slow Cooker Instead of the Instant Pot?
Absolutely! Simply follow a similar process of layering the ingredients, then cook on High for 3-4 hours or on low for 6-7 hours.
It’s up to you whether you want to slice the meat ahead of time or after it has been cooked. Since the crockpot makes chicken extra tender, you can also shred if you prefer.
Do I Need to Marinate Chicken for IP Fajitas?
Marinating the chicken is not necessary when using an Instant Pot.

Ingredients
- 1 ½ pounds boneless skinless chicken breast cut into strips
- 2 tablespoons fajita seasoning or taco seasoning works too!
- ½ tablespoon olive oil
- 1 cup salsa
- 2 bell peppers sliced
- 1 small onion sliced
- 1 lime juiced
Instructions
- Place chicken strips in a mixing bowl. Drizzle over the oil and sprinkle on seasoning, tossing to coat well.
- Place the seasoned chicken in the bottom of the Instant Pot, then top with the salsa. In a second layer, add the onions and peppers. Pour in the lime juice. Do not stir.
- Secure and seal the lid. Cook on Manual High for 4 minutes, performing a quick release of pressure at the end of the cook time. Open the lid and stir the contents of the pot together.
- Serve with your favorite fajita toppings

Hi Stewball, You can cook this recipe on the stove top as well. Use a large skillet to cook the seasoned chicken fully, then you can the rest of the ingredients to the pan. Bestt wishes!
