My Favorite Pork Loin Recipe
I’ve always loved pork loin, and so does my family. After years of trial and error, I officially have a favorite way of making it in the Instant Pot. It’s so tender and juicy when done right! My husband loves a good old-fashioned meat and potatoes meal (honestly, so do I!), so this Instant Pot pork loin has quickly become a staple for weeknight dinner.
There isn’t anything too complicated about it. I created the recipe to have 4 simple ingredients and an Instant Pot for busy nights so I can relax while it’s cooking. I like to sear the meat before I pressure cook it, which helps lock in all those delicious juices.

Pork Loin vs. Pork Tenderloin
Pork loin is larger than pork tenderloin and can be bone-in or boneless. Because it’s so big, I find the best way to cook it is in a crockpot or pressure cooker. Pork tenderloin is smaller, boneless, and needs to be cooked quickly to keep it from drying out.

How to Make Pork Loin in the Instant Pot

STEP ONE: Pat the pork dry with paper towels and season evenly on all sides. Press gently to help it adhere. Heat your Instant Pot using the sauté setting.
STEP TWO: When hot, add the olive oil and carefully place the seasoned pork loin in the Instant Pot. Sear each side for 2-3 minutes until golden brown. Remove from your IP and set aside.
STEP THREE: Deglaze the pot with chicken broth, then scrape up any browned bits with a spoon.
STEP FOUR: Return the pork to the IP with the broth and close the lid, making sure the valve is set to “Sealing.” Press “Cancel,” then “Manual” or “Pressure Cook” and set the time to 15 minutes at High pressure.
STEP FIVE: Let your IP do a natural pressure release for 10 minutes. Then, turn the valve to “Venting” to release any remaining pressure.
STEP SIX: Transfer the pork loin to a cutting board and let it rest for about 5 minutes before slicing and serving. Enjoy!
Tips for This Pork Loin Instant Pot Recipe
- Pat the pork loin thoroughly with paper towels before getting started to help the seasoning stick better. Don’t skip this step!
- The best way to determine whether your Instant Pot pork loin is ready is to use a meat thermometer. For it to be safe to eat, the internal temperature should be at least 145 degrees F.
- Be sure to let the meat rest before slicing and serving for the juiciest results! The juices need time to settle, which will make everything super tender.
- If you have any leftovers, let them cool completely before placing in an airtight container in the fridge where they’ll keep for up to 3-4 days.
- IP pork loin also freezes really well. Once cool, you can store it in an airtight container or freezer-safe bag in the freezer for up to 3 months. Let it thaw in the fridge overnight before reheating gently on the stovetop, in the oven, or in the microwave.
Variations for Instant Pot Pork Loin Roast
- Make a quick marinade from honey, minced garlic, and soy sauce. Add it to the pork loin roast in the Instant Pot before you sear it for a sweet and savory twist. I love to do this when I have a chance to marinate the pork ahead of time.
- Instead of pork seasoning, use paprika, garlic powder, onion powder, cayenne, thyme, and black pepper for a Cajun-inspired version.
- Make a teriyaki glaze by combining teriyaki sauce with honey and garlic. Brush it over the meat just before serving. When I do this, I love to throw the whole thing under the broiler to caramelize it!
What to Serve with This Recipe
Pork loin is so versatile, and I love serving it with my favorite carb and veggie to create a full meal. Some of my favorites include rosemary mashed potatoes, air fryer baked potatoes, green beans, and corn on the cob. How Long to Cook Pork Loin in the Instant Pot
I find it only takes 15 minutes to cook pork loin in the Instant Pot once I’ve seared the meat on all sides. I always use a meat thermometer to double-check that the internal temperature is 145 degrees F for safe eating.
Easy Instant Pot Pork Loin

Ingredients
- 2-3 pound pork loin NOT pork tenderloin
- 1 cup chicken broth
- 2 tablespoons Famous Dave's Rib Rub seasoning or other store-bought or homemade pork seasoning
- 2 tablespoons olive oil
Instructions
- Pat the pork loin dry with paper towels and then sprinkle the seasoning mix evenly over all sides of the meat, pressing gently to help it adhere to the meat.
- Press the sauté setting button on your Instant Pot. Wait for the display to read "Hot" then add 2 tablespoons of olive oil to the pot. Using tongs, place the pork loin in the pot and brown each side for 2-3 minutes, turning it over with tongs, until all sides are golden brown.
- Remove the browned pork loin and set it aside on a plate. Pour 1 cup of chicken broth into the Instant Pot and then use a wooden spoon to scrape the bottom of the pot, loosening any brown bits (this is called deglazing and it adds flavor to the broth).
- Return the pork loin to the Instant Pot, placing it in the broth. Close the lid and make sure the valve is set to "Sealing." Press the "Cancel" button to stop the Sauté function, then press "Manual" or "Pressure Cook" (depending on your model) and set the time to 15 minutes at high pressure.
- When the cooking time is over, let the Instant Pot do a natural pressure release for 10 minutes. Do not touch the pot during this time.
- After 10 minutes, carefully turn the valve to "Venting" to release any remaining pressure. Wait until the float valve drops before opening the lid.
- Remove the pork loin and then let it rest for 5 minutes before slicing on a cutting board and serving.
