How To Make Pesto Chicken Wraps with Sun-Dried Tomatoes

STEP ONE: Add the cooked and shredded chicken to a bowl, then mix in the pesto. I love to use a jarred kind for ease, but you can use a homemade one like this Pesto sauce made with pecans and basil.

STEP TWO: Working with one wrap at a time, spread a thin layer of mayonnaise across one side of the wrap.

STEP THREE: Next, add the pesto chicken, sun-dried tomatoes, shredded carrots, salt, and pepper. I like to use these Mezzetta sun-dried tomatoes. They’re stored in olive oil, which lets them stay fresher for longer.

STEP FOUR: Roll the wrap up tightly, then slice it in half.

STEP FIVE: Repeat with all remaining wraps and enjoy!

What Kind Of Chicken Can I Use For Chicken Wraps?

This recipe can be made with any kind of cooked chicken.

You can use air fryer chicken, rotisserie chicken, or even chicken tenders — basically any chicken you have on hand!

Once you mix the cooked, shredded chicken and the pesto, you can store the mixture in an airtight container in the refrigerator for 3-5 days.

To save even more time, you can pre-slice the sun-dried tomatoes as well.

If you don’t have any sun-dried tomatoes on hand, just chop up fresh ones. They will still add delicious, fresh flavor to your wrap.

Tips for Heating Your Pesto Chicken Wrap

Does a hot pesto chicken wrap sound like your perfect lunch? Then you can warm this dish up right in the air fryer!

  1. Preheat the air fryer to 350 degrees.
  2. Place the wrap in the air fryer and cook for 3 to 4 minutes.
  3. Remove from the air fryer and enjoy!

That’s it! You can cook the full wrap, or you can slice it in half and add a toothpick to hold it all together before cooking.

Ingredients

  • 1 1/2 pounds pre-cooked chicken shredded or diced into small pieces
  • 1/4 cup pesto
  • 4 tortilla wraps
  • 1/2 cup mayonnaise
  • 1/4 cup sun-dried tomatoes sliced (or freshly diced tomatoes)
  • 1/2 cup shredded carrots
  • salt and pepper to taste

Instructions
 

  • Add cooked chicken to a bowl and mix with the pesto.
  • Spread a thin layer of mayonnaise on one side of each wrap. Add the pesto chicken, sun-dried tomatoes, carrots, and salt and pepper, evenly distributed between each wrap.
  • Roll it up tight, place a toothpick in, if needed, and slice in half.*
  • Enjoy!

Notes

*You can heat this wrap up in the air fryer by placing the uncut wrap into a preheated air fryer and cooking at 350 degrees for 3-4 minutes.
