My pineapple casserole has become a go-to at the holiday table, and honestly, all year round. The sweet and savory flavors in my dish speak for themselves once you take your first bite.
I love this Pineapple Cheese Casserole
I love a good pineapple casserole, but I wanted to find a way to make it as easy as possible. Life is busy so if I can make a delicious recipe without the work, it’s a keeper to me!
I decided to use Ritz crackers for the top since we had a package of them about to expire and I love them as a crispy buttery topping (hence my green bean casserole and broccoli casserole recipes with them too).
In all honesty, the first response I get from anyone who has never heard of this recipe is…. pineapples and cheese? I tell them to take a bite and their mind is blown! It’s savory and sweet at the same time, which makes for the perfect side dish in my mind.

Pineapple Casserole Recipe ingredients
- All-purpose flour
- Sugar
- Cheddar cheese
- Butter
- Canned pineapple — with the juice
- Ritz crackers
How to make Pineapple Casserole

STEP ONE: Preheat your oven to 350 degrees F.
STEP TWO: In a medium bowl, combine flour, sugar, and shredded cheddar cheese. Mix well.
STEP THREE: Add reserved pineapple juice and the melted butter. Stir until everything is well combined.
STEP FOUR: Gently fold the drained pineapple chunks into the mixture, making sure the pineapple is evenly distributed throughout.
STEP FIVE: Pour the pineapple mixture into an 8×8 inch baking dish, spreading it out evenly.
STEP SIX: In a small mixing bowl, combine the crushed Ritz crackers with the melted butter. Mix until the crackers are well coated.
STEP SEVEN: Evenly spread the buttery crackers over the pineapple casserole.
STEP EIGHT: Place the baking dish in the preheated oven and bake for 30-40 minutes until the top is golden brown and the casserole is bubbling around the edges.
STEP NINE: Remove the casserole from the oven and let it cool for about 10-15 minutes before serving.
Baked Pineapple Casserole Variations
- Toss in some chopped nuts for a crunchy texture. I’ve used pecans and walnuts.
- You can use other crackers. I’ve used Townhouse or Saltines in this recipe and have even crushed up some cornflakes on top.
- Sprinkle some cinnamon or nutmeg into the casserole mixture for a warm spice hit.
- Mix in some coconut flakes to enhance the tropical flavor of the pineapple.
- Add some diced pineapple on top for caramelized goodness in every bite.
How to serve Pineapple Casserole with Cheese
For an everyday dinner, I like to serve this with baked pork chops, air fryer chicken tenders, chicken cordon bleu, or pulled pork.

Storing this Recipe for Pineapple Casserole
Keep any leftovers in an airtight container in the refrigerator. They’ll stay fresh for up to five days. I recommend reheating in the oven or microwave until warmed through.
I’ve also had success in freezing this recipe too! Just wrap it tightly and freeze for up to 3 months. Thaw in the refrigerator overnight before reheating.
