Ingredients for a Crock Pot Roast
- Chuck roast
- Baby yellow potatoes — I’ve used other types of potatoes, but just make sure they are diced as noted
- Baby carrots
- Onion
- Lipton’s beefy onion dry soup mix
- Mushrooms
- Olive oil
- Butter
- Cream of mushroom soup
- Italian seasoning
- Beef broth
How to Make a Chuck Roast in a Crock Pot

STEP ONE: Heat a large skillet over medium-high heat, then add oil.
STEP TWO: Once the oil is hot, add the boneless chuck roast and sear until browned on all sides, about 4-5 minutes per side.
STEP THREE: Transfer the browned roast to the bottom of the slow cooker.
STEP FOUR: Sprinkle 1 tablespoon of dry onion soup mix over the roast and pour ½ cup of beef broth around the roast.
STEP FIVE: Cut the stick of butter into pieces and place them on top of the roast, then spread the can of cream of mushroom soup over the roast.
STEP SIX: Cover the slow cooker with the lid and cook on Low for 8 to 10 hours or on High for 4 to 5 hours.
STEP SEVEN: Two hours before the end of the cooking time, place the 1.5 pounds of potatoes, ½ pound of baby carrots, 1 cup of diced onions, and 8 ounces of sliced mushrooms on top of the roast.
STEP EIGHT: Sprinkle 1 tablespoon of Italian seasoning over the vegetables and cover. Continue cooking the roast for the remaining 2 hours.
STEP NINE: Once the cooking time is complete, turn off the slow cooker and let the beef roast rest for about 10 minutes.
STEP TEN: Serve the fork-tender pot roast Crock Pot with the vegetables and gravy from the slow cooker.
Tips for This Chuck Roast Slow Cooker Recipe
- Sear the beef chuck roast to lock in flavors before slow cooking. This step is not mandatory, but I find it really does make a difference in the flavor.
- Cook on the Low setting for 8-10 hours for the best texture. I’ve cooked this on high and just didn’t love the way it turned out.
