INGREDIENTS

– Yukon gold potatoes – Low sodium chicken broth – Garlic powder – Dried thyme – Kosher salt, Black pepper – Diced ham, divided – Heavy cream – Dhredded cheddar cheese

Place the sliced potatoes in the Instant Pot. Pour over the broth & seasonings,  stir to combine.

Cook on Manual High for 1 minute and then perform a quick release.

Remove half of the potatoes from the instant pot. Place them in a baking dish, sprinkle ham over them. Add the rest of the potatoes, leaving any broth inside the Instant Pot.

Press Sauté, add the cream into the IP, and bring it to a simmer. Stir in 1 cup of the cheddar cheese. Add the rest of the ham.

Pour the cheese sauce over the potatoes & toss to combine. Sprinkle the rest of the cheddar on top & bake.

Broil your Instant Pot scalloped potatoes & ham on high for 2-3 mins. When the top is golden brown, remove it from the oven and enjoy!
