Raspberry Cheesecake Cookies

EVERYDAY FAMILY COOKING

INGREDIENTS

–  Butter, softened –  Cream cheese, softened –  Granulated sugar –  Large egg –  Pure vanilla extract –  All purpose flour –  Baking soda –  Freeze dried raspberries –  White chocolate chips

~ Cream together the softened cream cheese, butter & sugar until light & fluffy.  ~Add in the egg, vanilla & mix to combine, scraping down the sides as needed!

Slowly add the flour & baking soda with the mixer on low, mixing until just combined. Gently fold in the white chocolate chips & raspberries.

Portion dough into balls & place at least 2 inches apart on the baking sheet. Press down to form discs that are about ½ inch thick.

 Place cookie dough in the freezer for about 15 mins before baking!

~ Bake for about 8 mins, remove from the oven & tap it on the counter a few times.  ~ Return the pan to the oven to cook for another 3-5 mins or until the edges are golden brown & set.

Remove cookies from the oven & leave them on the baking sheet until cooled completely!
