Wash and prepare the vegetables. Slice the vegetables so that they are similar in size.
Combine all of the seasonings in a small bowl.
Toss the vegetables with the seasonings and olive oil.
Preheat the air fryer to 380 degrees. Cook the vegetables in a single layer, cooking in batches if needed, for 8-10 minutes, flipping the veggies at the 6-minute mark.
