Preheat the air fryer to 375 degrees and wash, peel, and cut the carrots into 1-inch pieces.
In a large bowl, combine the melted butter, honey, Italian seasoning, salt, and pepper. Add in the carrots and toss together until the carrots are evenly coated.
Place the carrots in the air fryer basket or tray in a single layer and cook for 10 to 15 minutes, flipping halfway through cooking. They are done when easily poked with a fork, but still a little firm.
Drizzle them with a little extra honey (optional) and serve!

Notes
If your air fryer only goes up in 10 degree increments, use 380 degrees F.
Cook the carrots in a single layer to help them evenly cook.
For an even simpler recipe, just use a little oil, salt, and pepper.
To reheat the carrots, place them in a preheated air fryer at 350 degrees F and cook for 3-4 minutes, until warmed.
Store any leftovers in an airtight container in the fridge for up to 4 days.
