Air Fried Vegetables ingredients

  • Red bell pepper
  • Zucchini
  • Mushrooms
  • Red onion
  • Garlic powder
  • Onion powder
  • Dried parsley
  • Ground cumin
  • Salt and pepper
  • Red pepper flake (optional)
  • Olive oil

How to Make Air Fryer Vegetables

STEP ONE: Wash and prepare the bell pepper, zucchini, mushrooms, and onion, then slice so that they are all similar in size. 

STEP TWO: Combine the garlic powder, onion powder, dried parsley, cumin, and salt and pepper in a small bowl.

STEP THREE: Toss the vegetables with the seasonings and olive oil.

STEP FOUR: Preheat the air fryer to 380 degrees F then air fry vegetables for 8-10 minutes, flipping the veggies at the 6-minute mark. 

STEP FIVE: Serve and enjoy!

Tips for Making the Best Air Fryer Roasted Vegetables

  • After washing the veggies, use a paper towel to dry them and remove any excess moisture so the oil sticks to them easier.
  • Toss the vegetables in the seasoning and oil until all the pieces are evenly coated.
  • Let the air fryer fully preheat before adding the vegetables for the best results.
  • Cook the mixed vegetables in one single layer, air frying in batches if needed to avoid overcrowding the basket, which prevents the hot air from circulating properly.
  • Flip the veggies by using tongs or a spatula halfway through the cooking time to promote even cooking.

Do You Need to Preheat the Air Fryer?

Yes, always preheat your air fryer before cooking anything! By adding the vegetables to a hot basket or tray, you ensure they start crisping up right away.

If you don’t preheat the air fryer first, the vegetables won’t cook as evenly.

How Long to Cook Veggies in the Air Fryer

How long it takes to air fry vegetables is going to depend on the size of your veggie slices. 

I recommend checking on them around the 8-minute mark to see if they’re tender on the inside. If not, add another minute or two.

Can You Store Leftover Air Fried Vegetables?

If you have extra air fried veggies, you can store them in an airtight container in the refrigerator for up to 5 days. 

Just make sure to let the veggies cool to room temperature first so you don’t trap condensation in the container.

  • 1 red bell pepper

  • 4 ounces sliced mushrooms
  • ½ red onion
  • 1 teaspoon garlic powder
