How to Make Pea Salad with Eggs

STEP ONE: Thaw out the frozen peas.
STEP TWO: Cook the bacon until crispy. Lay on a paper towel to soak up any excess grease until cooled, then chop into small pieces.
STEP THREE: Fill a pot with cold water, place the eggs inside, and bring to a boil. Once the water is boiling, cover with a lid and remove the pot from the heat.
STEP FOUR: Allow to sit for 10 minutes, then drain the hot water and fill the pot with ice cubes and cold water. Allow the eggs to sit in the cold bath for 5 minutes.
STEP FIVE: Tap the ends of the egg and peel the shells, then chop and add to a large bowl.
STEP SIX: Cube the cheddar cheese and chop the onion.
STEP SEVEN: In a medium bowl, combine the sour cream, mayonnaise, apple cider vinegar, sugar, and salt and pepper.
STEP EIGHT: In the large bowl with the chopped egg, add the peas, bacon, red onion, and cheddar cheese.

Pea Salad With Eggs
Ingredients
- 3 cups frozen peas thawed
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 8 bacon slices
- 2 hard boiled eggs
- 1/4 cup red onion chopped
- 1 tablespoon apple cider vinegar
- 1/2 cup cheddar cheese cubed
- 2 teaspoons granulated sugar
- salt and pepper to taste
Instructions
- Thaw the frozen peas by running them under cold water.
- Cook the bacon until it is crispy. Lay on a paper towel to soak up any excess grease. Once they are cooled, chop them into small pieces.
- Fill a pot with cold water, place the eggs inside, and bring to a boil.
- Once the water is boiling, cover with a lid and remove the pot from the heat. Allow to sit for 10 minutes for hard boiled eggs.
- Drain the hot water and fill the pot with ice cubes and cold water. Allow the eggs to sit in the cold bath for 5 minutes.
- When they are ready to be peeled, tap the ends of the egg and begin to peel the shells from the eggs. Slice and chop the eggs.
- Cube the cheddar cheese and chop the onion.
- In a medium bowl, combine the sour cream, mayonnaise, apple cider vinegar, sugar and salt and pepper.
- In a large bowl, place the peas, bacon, eggs, red onion, and cheddar cheese.
- Pour the dressing over the ingredients.
